First, it’s time for a new start. I’ve deleted everything on the blog, and we are starting fresh! It makes sense to me.
Eating twelve beyond chicken nuggets from KFC seemed like a good idea at 6 pm last night but not at 3 am this morning. I woke up to my stomach wondering what the hell had I done. Am I saying that I’ll never do it again? No! Next time I’m going to get six instead of twelve. Also, can we talk about the fries at KFC? I’m not sure if there is such a thing as a fry war, but if there was, KFC would win. They have upped their game. And, their special sauce is, well, special.
The 3 am thing puts a damper on the day; it creates a never-ending cycle of power napping at lunch and then not sleeping at night. I tried not to nap today, but I do think I fell asleep for a few minutes while my husband was watching Jeopardy at lunch. It’s our kink.
I needed more comfort food, so I decided to make vegetable lasagna for dinner. I used a plant-based bolognese sauce that we got from Costco, sauteed some onions, peppers and shredded some carrots. Hey, it’s healthy if it has all those veggies in it, right?
The cheese was not vegan because I ran out of it the other day while making quesadillas. I vow to do better next time, but not tomorrow, as we are going to a Brazilian steakhouse for my mother-in-law’s birthday. I’ve told myself that I’m going to be plant-based as much as possible, but I’m not going to let it get in the way of special events. If we go to a steak house, we go to a steak house. C’est La Vie.

There has been a lot of death lately. I saw this quote this morning, and it reminded me that when people die, they leave us physically, but they can never leave us mentally. I know we’ve lost a lot the last few years, so this is a good reminder.
